  • 2 pounds Asparagus trimmed and chopped
Broth
  • 4 cups Vegetable or Chicken Broth homemade preferred
Creamy Texture
  • 1 medium Avocado ripe, or silken tofu
Freshness
  • 1 tablespoon Fresh Lemon Juice or lime juice
  • to taste Fresh Herbs (Parsley, Basil, Dill, Chives)

  • Immersion blender

Method
 

Instructions
  1. In a large pot, heat olive oil over medium heat. Add diced onion and chopped celery, sautéing for 3-4 minutes until translucent. Stir in minced garlic, salt, and pepper, cooking for another 30 seconds until fragrant.
  2. Add chopped asparagus and broth to the pot. Bring to a boil, then reduce heat and cover. Simmer for 20-25 minutes until asparagus is tender.
  3. Remove pot from heat and stir in avocado, lemon juice, and fresh herbs. Blend until smooth using an immersion blender or transfer to a blender.
  4. Ladle soup into warm bowls, garnishing with olive oil and reserved asparagus tips. Serve warm.

Notes
