Ingredients
  

For the Fish
  • 1 lb Cod Fillet Fresh or frozen
  • 2 tbsp Oil Use olive oil
  • 1 tbsp Lemon Juice Fresh is best
  • 1.5 tsp Paprika Smoked paprika recommended
  • 0.5 tsp Cayenne Pepper Adjust to taste
  • 0.5 tsp Ground Cumin Can substitute with coriander
  • Salt Adjust to taste
For the Sauce and Slaw
  • 1 cup Greek Yogurt Or sour cream
  • 2 tbsp Mayonnaise Optional
  • 1 cup Purple Cabbage Shredded
  • 3/4 cup Carrots Fresh or shredded
  • 1/3 cup Frozen Corn Fresh or canned works too
  • 2 tbsp Jalapenos Chopped, adjust to taste
  • 1/4 cup Cilantro Chopped
For Assembly
  • 6-8 pieces Corn Tortillas Use flour for gluten-free

Method
 

Marinate the Fish
  1. Whisk together oil, lemon juice, paprika, cayenne pepper, ground cumin, and salt in a bowl. Add the cod fillets and marinate for at least 30 minutes.
Prepare the Sauce
  1. In another bowl, mix Greek yogurt, mayonnaise, lemon juice, paprika, and a pinch of salt. Stir until smooth, then refrigerate.
Make the Slaw
  1. Combine purple cabbage, carrots, corn, jalapenos, and cilantro in a large bowl. Drizzle with yogurt and lemon juice, add salt, and toss. Chill until serving.
Cook the Fish
  1. Heat a skillet over medium-high heat. Add marinated cod and cook for 3-5 minutes on each side until golden and flaky.
Assemble the Tacos
  1. Char the tortillas, add cooked cod, top with slaw and sauce, and garnish with jalapenos and cilantro.
