  • 1 tablespoon Olive Oil or avocado oil
  • 1 small Onion
  • 1 medium Bell Pepper or zucchini for low-carb option
  • 2 cloves Garlic minced
  • 2 tablespoons Sugar-Free Taco Seasoning or homemade
  • 1 cup Sour Cream or Greek yogurt
  • 8 ounces Cream Cheese softened
  • 2 large Eggs or flax eggs for vegan
  • 1 cup Shredded Cheddar Cheese divided
  • 1 cup Shredded Mozzarella Cheese divided
For Optional Toppings
  • 1 cup Diced Tomatoes
  • 1/2 cup Jalapeños sliced
  • 1 medium Avocado sliced
  • 1/2 cup Black Olives sliced
  • 1/4 cup Cilantro chopped
  • 1/2 cup Salsa
  • 1/4 cup Green Onions sliced

Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat for 1-2 minutes.
  2. Add 1 pound of seasoned ground beef to the skillet and cook until browned, about 5-7 minutes.
  3. Toss in 1 diced onion, 2 cloves of minced garlic, and 1 diced bell pepper. Sauté for 3-4 minutes until tender.
  4. Stir in 2 tablespoons of sugar-free taco seasoning, salt, and pepper. Simmer for 2 minutes.
  5. In a bowl, whisk together 1 cup of sour cream, 8 ounces of softened cream cheese, and 2 eggs until smooth.
  6. Fold in 1 cup of shredded cheddar and 1 cup of shredded mozzarella cheese into the cream mixture.
  7. Preheat your oven to 350°F and grease a 9x13-inch baking dish.
  8. Spread the meat and vegetable mixture in the baking dish.
  9. Pour the cheese mixture over the meat layer and spread evenly.
  10. Sprinkle 1 cup of shredded cheddar and 1 cup of mozzarella cheese on top.
  11. Bake for 25-30 minutes until golden and bubbling.
  12. Cool for 5 minutes before serving.
