Step-by-Step Instructions
  1. Prepare Brown Butter: Melt ½ cup of butter over medium heat, stirring until golden brown and nutty, about 5-7 minutes.
  2. Mix Dry Ingredients: In a bowl, whisk together 1 ½ cups of all-purpose flour, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients: In another bowl, mix ¾ cup granulated sugar, ½ cup brown sugar, 12 oz mashed bananas, ½ cup Greek yogurt, browned butter, and vanilla.
  4. Incorporate Dry Ingredients: Fold the dry mixture into the wet until just combined.
  5. Caramelize Bananas: Melt 1 tbsp butter with 1 tbsp honey, add sliced bananas, and cook until golden, about 2-3 minutes.
  6. Layer the Batter: Pour half of the batter into a greased loaf pan, add half caramelized bananas, top with remaining batter and bananas.
  7. Bake: Preheat oven to 350°F (175°C) and bake for 50-60 minutes until a toothpick comes out clean.
