Preparation Steps
- Soak the Pitted Medjool Dates in very hot water for 10 minutes to soften.
- Drain the dates and blend them with almond butter and melted coconut oil until smooth.
- Transfer the mixture to a lined loaf pan, spread evenly, and freeze for 2-3 hours.
- Cut the set mixture into 12 squares.
- Melt chocolate chips and remaining coconut oil in the microwave in 30-second increments.
- Dip each square in melted chocolate, ensuring full coverage, and transfer to a parchment-lined plate.
- Chill the coated caramels in the fridge for 1 hour to harden the chocolate.
