  • 1 cup Heavy Cream can substitute with coconut milk or nut-based cream

Method
 

Directions
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering, about 1-2 minutes.
  2. Add 1 chopped onion to the pot and sauté until it turns translucent and soft, about 5 minutes.
  3. Stir in 3 cloves of minced garlic and cook for another minute.
  4. Pour in 2 cans of drained white beans, 4 cups of vegetable broth, 2 tablespoons of Dijon mustard, 1 teaspoon of dried thyme, and a sprinkle of black pepper.
  5. Reduce the heat to low and let the soup simmer uncovered for 15 minutes.
  6. Using an immersion blender, carefully blend the soup until smooth, about 1-2 minutes.
  7. Stir in 1 cup of heavy cream and heat the soup over low for an additional 2 minutes.
  8. Ladle the soup into bowls and garnish with crumbled turkey bacon if desired.
