Ingredients
  

For the Meatballs
  • 1 lb Ground Beef lean preferred
  • 1 cup Breadcrumbs seasoned or gluten-free oats
  • 1 large Egg for binding
  • 2 tbsp Fresh Oregano chopped
  • 2 cloves Garlic minced
  • to taste Salt
  • to taste Pepper
For the Lemon Sauce
  • 1/4 cup Lemon Juice fresh
  • 1 tbsp Lemon Zest fresh
  • 1 cup Chicken Broth or vegetable broth
  • 2 tbsp Olive Oil for cooking

Method
 

Preparation
  1. In a large mixing bowl, combine the ground beef, breadcrumbs, egg, fresh oregano, minced garlic, salt, and pepper. Mix gently.
  2. Lightly wet your hands and shape the mixture into uniform meatballs, placing them on a baking sheet.
Cooking
  1. In a large skillet over medium heat, add olive oil and add the meatballs, browning them for 5-7 minutes.
  2. Remove the meatballs and in the same skillet, add lemon juice and zest, scraping browned bits. Stir in chicken broth and simmer for 2-3 minutes.
  3. Add the meatballs back to the skillet, cover, and simmer on low for 15 minutes.
  4. Let the meatballs rest for a few minutes before serving.
