  • 1/4 cup Lime Juice Replace with lemon juice if needed.
  • 1 tablespoon Lime Zest Use fresh for best flavor.
  • 1 teaspoon Chili Powder Swap with cayenne for more heat.
  • 1 tablespoon Brown Sugar Honey or agave syrup can be used.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Ground Cumin Optional but great for flavor.
  • 1 teaspoon Smoked Paprika Use regular paprika if necessary.
  • 1 teaspoon Onion Powder Substitute with fresh onions if preferred.
  • 1 teaspoon Garlic Powder Fresh garlic is a good alternative.
  • 1 teaspoon Chipotle Chili Powder Optional for extra heat.

For the Avocado Salsa
  • 2 pieces Avocados Use ripe but firm for best texture.
  • 1 cup Cherry or Roma Tomatoes Any ripe tomato variety can be used.
  • 1 cup Fresh Corn Fresh preferred but canned is acceptable.
  • 1/2 cup Red Onion Green onions can be used for milder flavor.
  • 1 piece Red Bell Pepper Any bell pepper variety works.
  • 1 piece Jalapeno Pepper Remove seeds for milder salsa.
  • 1/4 cup Cilantro Parsley can be used as a substitute.
  • 1 clove Garlic Can substitute with garlic powder.

Method
 

Instructions
  1. In a small bowl, combine olive oil, lime juice, lime zest, chili powder, brown sugar, salt, ground cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder, and freshly cracked pepper. Mix thoroughly to create the rub.
  2. Rub the Fiesta Lime mixture on the chicken, ensuring full coverage. Marinate for at least 30 minutes, or refrigerate for up to 8 hours.
  3. Heat the grill or grill pan over medium-high heat. Grill chicken for 5-7 minutes on each side until golden brown and cooked through.
  4. Wash and chop the avocados, tomatoes, corn, red onion, red bell pepper, jalapeño, and cilantro in a large bowl. Mix well, cover, and chill for at least 30 minutes.
  5. Before serving, gently fold the diced avocados into the chilled salsa. Serve the sliced chicken topped with the salsa.
