- In a small bowl, combine olive oil, lime juice, lime zest, chili powder, brown sugar, salt, ground cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder, and freshly cracked pepper. Mix thoroughly to create the rub.
- Rub the Fiesta Lime mixture on the chicken, ensuring full coverage. Marinate for at least 30 minutes, or refrigerate for up to 8 hours.
- Heat the grill or grill pan over medium-high heat. Grill chicken for 5-7 minutes on each side until golden brown and cooked through.
- Wash and chop the avocados, tomatoes, corn, red onion, red bell pepper, jalapeño, and cilantro in a large bowl. Mix well, cover, and chill for at least 30 minutes.
- Before serving, gently fold the diced avocados into the chilled salsa. Serve the sliced chicken topped with the salsa.
