  • 2 cups Shredded Cheese blend of cheddar and Monterey Jack

  • 1 cup Sour Cream or Greek yogurt
  • 2 cups Shredded Lettuce
  • 1 medium Tomato diced
  • 1/2 cup Sliced Black Olives optional
  • 1/4 cup Green Onions for garnish

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a skillet, heat olive oil, then sauté the onion until translucent. Add the ground beef, cook until browned.
  3. Add taco seasoning and water, stir, and simmer for 2-3 minutes.
  4. Stir in black beans and diced tomatoes, cook for an additional 2 minutes.
  5. Layer half of the crushed corn chips, followed by half the beef mixture and half of the cheese. Repeat the layers.
  6. Bake for 15-20 minutes until cheese is melted and bubbly.
  7. Let the casserole rest for 5 minutes before serving. Top with sour cream, lettuce, tomato, and olives.
