  • 2 slices sturdy bread (sourdough or ciabatta) for optimal grilling
  • 4 tablespoons softened butter for spreading
  • 4 tablespoons Parmesan cheese can substitute with pecorino
  • 1 teaspoon garlic powder or fresh minced garlic
  • assorted cheese (Havarti, Gruyere, sharp cheddar, or mozzarella) melting is key
  • assorted turkey meats deli-style works best
For the Creamy Dressing
  • ¼ cup mayonnaise base for the dressing
  • 1 tablespoon red grape juice vinegar alternative: apple cider vinegar
  • 2 tablespoons Italian seasoning can use fresh herbs
  • ½ teaspoon cracked pepper also add salt for seasoning
For the Salad Mix
  • 1 cup lettuce or arugula/spinach
  • ¼ cup red onions omit for milder taste
  • ¼ cup banana peppers or swap for pickles/jalapeños

Method
 

Step-by-Step Instructions
  1. In a small bowl, combine 4 tablespoons of softened butter with 4 tablespoons of grated parmesan and 1 teaspoon of garlic powder. Mix until smooth and creamy.
  2. Take one slice of prepared bread and layer a slice of cheese. Add a generous layer of assorted turkey meats and another slice of cheese. Top with another slice of bread, buttered side facing up.
  3. Heat a nonstick skillet over low heat for about 2 minutes. Place your assembled sandwich in the skillet and cook for 5-6 minutes until golden-brown. Flip the sandwich gently and grill the other side for an additional 5-6 minutes.
  4. In a medium bowl, mix together ¼ cup of mayonnaise, 1 tablespoon of red grape juice vinegar, 2 tablespoons of parmesan, ½ teaspoon of garlic powder, and 1 teaspoon of Italian seasoning. Stir until well-combined.
  5. Fold in 1 cup of chopped lettuce, ¼ cup of thinly sliced red onions, and ¼ cup of banana peppers into the dressing mixture. Toss until well-coated.
  6. Transfer the grilled sandwich to a plate, slice in half, and stuff with the prepared salad mixture. Serve immediately.
