  • 1 block Tofu extra-firm, cubed
  • 1 large Avocado cubed
For the Dressing
  • 3 tablespoons Vegan Cream Cheese
  • 2 tablespoons Vegan Mayo
  • 1 tablespoon Sriracha adjust for spice preference
  • 1 tablespoon Chili Oil omit for mild
  • 2 tablespoons Soy Sauce or tamari for gluten-free
For the Topping
  • 1 tablespoon Sesame Seeds or substitute with crushed nori

Method
 

Step-by-Step Instructions
  1. Wash and slice cucumbers, then thinly slice them into rounds or half-moons.
  2. Julienne carrots and slice the onion thinly; combine with cucumbers in a bowl.
  3. Cube the avocado and set aside, being careful not to mash it.
  4. Prepare the tofu by pressing it to remove moisture; bake at 400°F for 25 minutes or pan-fry for 10 minutes.
  5. Whisk together the dressing ingredients until smooth and creamy.
  6. Layer the salad in a jar: start with cucumber, add onion, tofu, edamame, carrots, and top with avocado.
  7. Drizzle the dressing over the layered salad and sprinkle sesame seeds on top.
  8. Seal the jar and chill for at least 30 minutes before serving.
