  2. Juice the Lemon: Squeeze one fresh lemon for about 1 ounce of juice, strain out any seeds.
  3. Mix the Ingredients: In a shaker, add 2 tablespoons fig jam, 2 ounces gin, 1 ounce lemon juice, and 1 ounce thyme syrup. Fill with ice, shake for 15 seconds.
  4. Strain & Serve: Fill glasses with ice and strain the mixture into each glass. Top with 3 ounces sparkling water.
