Ingredients
  

For the Pasta
  • 12 oz Whole Wheat Pasta Can substitute with gluten-free pasta.
For the Veggies
  • 2 cups Zucchini Diced; yellow squash can be substituted.
  • 4 medium Ripe Tomatoes Halved; canned tomatoes can work if fresh isn’t available.
  • 3 cloves Garlic Minced; fresh garlic is best.
  • 1 cup Fresh Basil Chopped; parsley can serve as a substitute.
For Cooking
  • 2 tbsp Olive Oil Avocado oil can also be used.
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1/4 tsp Red Pepper Flakes Optional for heat.
For Garnishing
  • 1/4 cup Parmesan Cheese Optional; nutritional yeast is a vegan alternative.

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil over high heat. Add whole wheat pasta and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of the pasta water, then drain the pasta.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced zucchini and sauté for 4-5 minutes until tender and slightly golden.
  3. Add the minced garlic to the skillet. Stir and cook for about 1 minute until fragrant.
  4. Stir in the halved ripe tomatoes, along with a pinch of salt, pepper, and optional red pepper flakes. Cook for 5-7 minutes until the tomatoes break down and form a light sauce.
  5. Add the drained pasta to the skillet, tossing everything together. Add reserved pasta water as needed to achieve desired sauce consistency.
  6. Remove from heat and stir in the chopped fresh basil. Optionally, sprinkle grated Parmesan cheese on top before serving.
