- Preheat your oven to 350°F (177°C) and spray a muffin pan with nonstick cooking spray.
- In a large mixing bowl, whisk together the oats, cinnamon, eggs, milk, and optional maple syrup.
- Gently fold in the chopped apples and any desired nuts.
- Spoon the oatmeal batter into the prepared muffin cups, filling each about 3/4 full.
- Optionally, sprinkle coarse sugar on top of each filled muffin cup.
- Bake for 28-30 minutes until golden-brown and firm on top.
- Let the cups cool in the muffin pan for 5-10 minutes before removing.
