  • 1 cup Tomatoes or bell peppers
  • 1 cup Cheese feta for Mediterranean flair or omit
  • 1 cup Beans black beans for Tex-Mex
  • ¼ cup Cilantro or parsley as substitute
  • 1 lime Lime Juice or lemon juice

Method
 

Preparation Steps
  1. Preheat the oven to 400°F (200°C).

  3. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes until tender and golden brown.

  5. In a skillet, heat olive oil, brown ground beef, then stir in garlic, onion, chili powder, and cumin.
  6. Assemble the bowl with rice, sweet potatoes, ground beef, and toppings of choice.
