  • 4 fillets Salmon can substitute with trout or arctic char
  • 1/4 cup Brown Sugar coconut sugar can be used for less sweetness
  • 1 teaspoon Smoked Paprika or sweet paprika for a milder flavor
  • 2 tablespoons Olive Oil use extra virgin for best flavor
  • 1 tablespoon Lemon Zest lime zest can be used for a different flavor
  • 1 teaspoon Salt sea salt or kosher salt recommended
For the Vegetables
  • 2 cups Green Beans or substitute with other quick-cooking vegetables

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. In a small bowl, mix together brown sugar, lemon zest, smoked paprika, and salt. Stir until combined.
  3. Pat salmon fillets dry and drizzle olive oil over each fillet, coating them well.
  4. Sprinkle the brown sugar mixture over the salmon, gently pressing it in. Let sit for 10-15 minutes if possible.
  5. Place the salmon skin-side down on the baking sheet with space between each piece for even cooking.
  6. Toss green beans with olive oil, salt, and pepper. Scatter around salmon on the baking sheet.
  7. Bake in the preheated oven for 12-15 minutes until the salmon reaches 125°F (51°C) and flakes easily.
  8. Let the salmon rest for a minute before serving with roasted vegetables and lemon wedges.
