Step-by-Step Instructions
  1. In a medium bowl, chop fresh strawberries and drizzle in honey. Gently stir until evenly coated, let sit for 10 minutes.
  2. In another bowl, combine cream cheese, powdered sugar, lemon juice, vanilla extract, salt, and mint. Blend until creamy, about 2-3 minutes.
  3. Spread an even layer of the cream cheese mixture on one side of each slice of bread.
  4. Spoon the honey-coated strawberries evenly over half of the cream cheese-covered slices.
  5. Place the remaining slices of bread cream cheese side down on top of the strawberry-covered slices.
  6. Cut each assembled sandwich into quarters or triangles with a sharp knife.
  7. Arrange your sandwiches on a platter and enjoy fresh or refrigerate until ready to serve.
