  1. Prepare the Glaze: In a medium saucepan over medium heat, combine apple cider, honey, Dijon mustard, and minced garlic. Stir occasionally for about 8–10 minutes until it thickens.
  2. Sear the Chicken: Heat oil in a large skillet over medium-high heat. Season chicken with salt and pepper. Sear skin-side down for 6-7 minutes until golden brown, then flip and cook for an additional 5 minutes.
  3. Glaze the Chicken: Reduce heat to medium-low, pour glaze over chicken, ensuring it’s well coated, and simmer for 5-6 minutes, basting frequently.
  4. Mix the Slaw: In a mixing bowl, combine shredded cabbage, carrots, and apple slices. In a separate bowl, whisk apple cider vinegar, celery seeds, salt, and pepper, then drizzle over slaw and toss gently.
  5. Serve: Arrange chicken on plates, nestled next to or on top of slaw. Garnish with chopped parsley or chives and enjoy.
