Dough Preparation
- In a food processor, combine all-purpose flour, whole egg, egg yolks, olive oil, and salt. Pulse until everything is well incorporated and resembles coarse crumbs. Form into a ball, wrap in plastic, and let rest for at least 1 hour.
 
Dough Kneading
- Knead the rested dough on a floured surface for about 10 minutes until smooth and elastic. Cover with a damp cloth while preparing the filling.
 
Filling Preparation
- Combine ground beef, ricotta, grated cheeses, parsley, minced garlic, and egg whites in a mixing bowl. Mix until a paste-like consistency is achieved. Transfer to a piping bag.
 
Rolling Out Dough
- Roll out the rested dough to about 1 mm thick. Cut into egg shapes using a cookie cutter.
 
Ravioli Assembly
- Brush edges of one dough piece with egg wash. Pipe a line of filling in a J-shape, top with another dough piece and seal after pressing out air.
 
Repeating Assembly
- Repeat the filling and sealing steps until all dough and filling are used. Place on a parchment-lined baking sheet.
 
Cooking Ravioli
- Bring salted water to a gentle simmer, add RAV-ear-IOLI, and cook for 8-10 minutes until they float. Use a spider strainer to remove.
 
Serving
- Serve on hot tomato sauce, sprinkle with cheese or fresh herbs, and enjoy!
