Ingredients
  

For the Pasta Dough
  • 2 cups All-Purpose Flour Can substitute with gluten-free flour.
  • 1 whole Whole Egg Egg whites reserved for sealing.
  • 2 large Egg Yolks
  • 1 tablespoon Olive Oil Use vegetable or canola oil as alternatives.
  • 1 teaspoon Salt
For the Filling
  • 1 pound Ground Beef Can swap with ground turkey or plant-based meat.
  • 1 cup Cheese (Parmesan, Romano, Asiago) Feel free to use a mix.
  • 1 cup Ricotta Cheese Cottage cheese can be used for a lighter filling.
  • 2 tablespoons Parsley Omit if not available.
  • 2 cloves Garlic Minced; garlic powder can be used if fresh isn't available.

Method
 

Dough Preparation
  1. In a food processor, combine all-purpose flour, whole egg, egg yolks, olive oil, and salt. Pulse until everything is well incorporated and resembles coarse crumbs. Form into a ball, wrap in plastic, and let rest for at least 1 hour.
Dough Kneading
  1. Knead the rested dough on a floured surface for about 10 minutes until smooth and elastic. Cover with a damp cloth while preparing the filling.
Filling Preparation
  1. Combine ground beef, ricotta, grated cheeses, parsley, minced garlic, and egg whites in a mixing bowl. Mix until a paste-like consistency is achieved. Transfer to a piping bag.
Rolling Out Dough
  1. Roll out the rested dough to about 1 mm thick. Cut into egg shapes using a cookie cutter.
Ravioli Assembly
  1. Brush edges of one dough piece with egg wash. Pipe a line of filling in a J-shape, top with another dough piece and seal after pressing out air.
Repeating Assembly
  1. Repeat the filling and sealing steps until all dough and filling are used. Place on a parchment-lined baking sheet.
Cooking Ravioli
  1. Bring salted water to a gentle simmer, add RAV-ear-IOLI, and cook for 8-10 minutes until they float. Use a spider strainer to remove.
Serving
  1. Serve on hot tomato sauce, sprinkle with cheese or fresh herbs, and enjoy!
