  • 1/4 Red Onion finely diced
  • 1 cup Corn frozen, canned, or grilled
  • 2 tablespoons Lime Juice freshly squeezed preferred
  • 1/4 cup Cilantro chopped
  • 1/2 Jalapeno finely diced, seeds removed for milder flavor

Step-by-Step Instructions
  1. Start by rinsing one can of black beans thoroughly under cold water. While they drain, finely dice one bell pepper, a quarter of a red onion, and half a jalapeno.
  2. In a large mixing bowl, combine the drained black beans with your diced bell pepper, onion, corn, lime juice, chopped cilantro, and a pinch of salt and pepper. Mix until evenly incorporated.
  3. With a fork or potato masher, gently mash about half of the bean mixture for a creamy yet chunky consistency. Aim for a blend of whole beans and mashed pieces.
  4. Cover the bowl with plastic wrap and refrigerate the dip for at least 30 minutes to allow flavors to meld.
  5. Once chilled, transfer your Halloween Bean Dip to a serving bowl and serve with crispy blue corn tortilla chips.
