  • 4 cups fresh spinach can substitute with kale or arugula
  • 1 cup sun-dried tomatoes or fresh tomatoes or roasted red peppers
  • 1 cup feta cheese consider goat cheese or vegan cheese for a dairy-free option
  • 2 cups pasta any preferred type like rotini, penne, or gluten-free
For the Dressing
  • 1/2 cup olive oil or avocado oil as an alternative
  • 1/4 cup balsamic vinegar or red wine vinegar or lemon juice
  • 1 tablespoon Dijon mustard can be omitted or replaced with yellow mustard
  • 2 cloves garlic fresh minced is recommended but garlic powder can be used

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook according to package instructions until al dente, typically around 8-10 minutes.
  2. Once cooked, drain the pasta in a colander and rinse it under cold water to stop the cooking process and cool it down quickly.
  3. In a medium-sized bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, minced garlic, and a pinch of salt and pepper until well combined.
  4. In a large mixing bowl, combine the cooled pasta, fresh spinach, chopped sun-dried tomatoes, and crumbled feta. Gently toss together.
  5. Drizzle the prepared dressing over the salad mixture and fold gently to coat all ingredients evenly.
  6. Cover the bowl with plastic wrap or transfer to an airtight container, then refrigerate for at least 30 minutes before serving.
