Step-by-Step Instructions
  1. In a large pot, heat over medium-high heat, adding the ground pork sausage. Use a wooden spoon to break it apart as it cooks, about 5-7 minutes, until browned and no longer pink. Drain any excess fat carefully.
  2. Return the pot to the heat, sprinkling in the taco seasoning as you stir for about 1 minute. Then, add the fire-roasted tomatoes along with their juices, stirring to combine. Cook for another 2-3 minutes.
  3. Pour in the white hominy and about 2 cups of water into the pot, stirring thoroughly to mix all the ingredients. Bring the soup to a gentle simmer over medium heat, cooking for 10-15 minutes.
  4. Just before serving, stir in the fresh cilantro to infuse your Spicy Sausage Posole with a burst of color and flavor. Allow it to heat through for an additional 1-2 minutes.
  5. Ladle the hot posole into bowls. Top generously with a dollop of sour cream and a handful of crunchy tortilla chips for added texture and flavor. Serve immediately.
