- Preheat the oven to 375°F (190°C) and prepare your ingredients and equipment.
- In a large mixing bowl, combine the ground beef, chopped onion, cilantro, diced jalapeño, minced garlic, ground cumin, chili powder, smoked paprika, salt, and pepper. Mix gently for 2–3 minutes.
- Fold in the shredded cheddar cheese and crushed tortilla chips into the meat mixture.
- Pour the beaten egg into your mixture and stir gently until fully integrated.
- Form tablespoon-sized balls with the mixture and arrange them on a plate.
- Heat olive oil in a skillet over medium heat and sear the meatballs for about 5 minutes until golden-brown.
- Pour the can of Mexican-style tomatoes around the meatballs in the skillet to create a sauce.
- Transfer the skillet to the preheated oven and bake for 15–20 minutes or until internal temperature reaches 160°F (71°C).
