  • 1 Avocado ripe
  • 2 tablespoons Everything But the Bagel Seasoning
For Assembly
  • 2 slices Bread or gluten-free crackers
  • 1 handful Spinach or arugula
  • 1/2 cup Cucumber diced
  • 1 tablespoon Lemon Juice optional

Method
 

Preparation Steps
  1. Slice a ripe avocado in half, remove the pit, and scoop the flesh into a mixing bowl. Mash until smooth.
  2. Drain and rinse the chickpeas, then add them to the bowl. Mash gently until half are broken down.
  3. Sprinkle in the Everything But the Bagel Seasoning and stir until well combined.
  4. Fold in the spinach and diced cucumber into the mixture.
  5. Choose your bread or crackers and spoon the filling onto one slice. Top with another slice and press.
  6. Slice the sandwich in half and serve immediately with fresh fruit or veggie sticks.
