  • 1 can Tomatoes and Green Chiles Fresh diced tomatoes can be used
  • 1/2 cup Pickled Jalapenos Sub with fresh jalapenos or omit
  • 1/4 cup Pepperoncini Can omit for less intensity
  • 1/4 cup Mayonnaise Greek yogurt or sour cream can substitute
  • 1/2 cup Taco Sauce Salsa is a good alternative
  • 1 tsp Dried Chipotle Peppers Omit for a milder flavor
  • 1/4 cup Cilantro Add fresh just before serving

Method
 

Step-by-Step Instructions
  1. Begin by heating a skillet over medium-high heat. Add the chopped white onion and sauté for about 5 minutes until soft and translucent.
  2. Introduce the ground beef to the skillet. Cook for approximately 5 minutes until evenly browned. Drain any excess fat.
  3. Stir in the taco seasoning and pepperoncini juice, allowing the spices to coat the meat. Cook for an additional minute then remove from heat.
  4. Prepare your slow cooker by spraying with non-stick spray. Layer refried beans, followed by nacho cheese, and then the seasoned beef mixture.
  5. In a mixing bowl, combine fiesta corn, diced tomatoes and green chiles, pickled jalapenos, diced pepperoncini, mayonnaise, and taco sauce. Spread over the beef layer in the slow cooker.
  6. Sprinkle dried chipotle peppers on top, cover, and cook on low for 4 hours or high for 2 hours.
  7. Remove chipotle peppers before serving. Garnish with fresh cilantro and enjoy with tortilla chips.
