- Begin by heating a skillet over medium-high heat. Add the chopped white onion and sauté for about 5 minutes until soft and translucent.
- Introduce the ground beef to the skillet. Cook for approximately 5 minutes until evenly browned. Drain any excess fat.
- Stir in the taco seasoning and pepperoncini juice, allowing the spices to coat the meat. Cook for an additional minute then remove from heat.
- Prepare your slow cooker by spraying with non-stick spray. Layer refried beans, followed by nacho cheese, and then the seasoned beef mixture.
- In a mixing bowl, combine fiesta corn, diced tomatoes and green chiles, pickled jalapenos, diced pepperoncini, mayonnaise, and taco sauce. Spread over the beef layer in the slow cooker.
- Sprinkle dried chipotle peppers on top, cover, and cook on low for 4 hours or high for 2 hours.
- Remove chipotle peppers before serving. Garnish with fresh cilantro and enjoy with tortilla chips.
