Method

Step-by-Step Instructions for Simple Stir-Fried Noodle
  1. In a small bowl, whisk together low-sodium soy sauce, oyster sauce, toasted sesame oil, brown sugar, and rice vinegar to create your sauce. Marinate thinly sliced beef in a mix of soy sauce and cornstarch for about 10 minutes.
  2. Bring a large pot of salted water to a boil over high heat. Add your choice of noodles and cook for about 5-7 minutes until slightly undercooked. Drain and rinse under cold water.
  3. Heat a large wok or non-stick skillet over medium-high heat and add a tablespoon of oil. Add the marinated beef, searing for about 1-2 minutes on each side until browned, then remove from the pan.
  4. In the same pan, sauté chopped onions for 2 minutes until translucent. Add broccoli and carrots, stirring for another 2-3 minutes. Then add minced garlic and ginger, cooking for about 30 seconds until fragrant.
  5. Pour the prepared sauce into the pan with the vegetables, letting it simmer for about 1-2 minutes to thicken slightly. Stir continuously to coat the vegetables.
  6. Add the cooked noodles and the seared beef back into the pan, tossing everything together for about 2-3 minutes until well coated and heated through.
  7. Remove from heat and transfer the noodles to a serving platter. Garnish with sliced green onions and toasted sesame seeds, serve hot.

Notes

Mise en place is key for smooth preparation. Avoid overcrowding the pan when searing beef for better browning. Rinse noodles well to prevent sticking, and don't be afraid to creatively use available veggies.
