Ingredients
  

For the Base
  • 2 tablespoons Olive Oil Feel free to swap with avocado oil.
  • 1 pound Ground Turkey Or use chicken or lean beef.
  • 3 cloves Garlic, minced Garlic powder can be used if fresh is out.
  • 1 medium Onion, diced A yellow or white onion is best.
  • 2 stalks Celery, diced Leeks can be an alternative.
  • 2 medium Carrots, diced Baby carrots save prep time!
  • 2 medium White Potatoes, peeled and chopped Sweet potatoes are a good alternative.
  • 1 can Diced Tomatoes, drained Fresh tomatoes can be used when in season.
  • 4 cups Chicken Broth Substitute with vegetable broth for a vegetarian option.
For Seasoning
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Pepper Freshly cracked is best.
  • 1 teaspoon Garlic Powder Omit if using fresh garlic.
  • 1 teaspoon Dried Oregano Italian seasoning can substitute.
  • 1 teaspoon Ground Thyme Use fresh thyme if available.
For the Finishing Touch
  • 2 cups Spinach, fresh or frozen Substitute with kale or Swiss chard.
  • 1/4 cup Fresh Parsley Optional garnish.

Method
 

Step-by-Step Instructions
  1. Sauté the Ground Turkey: Heat olive oil in a skillet over medium-high heat. Add ground turkey and cook for 5-10 minutes until golden brown.
  2. Transfer to Slow Cooker: Move cooked turkey to slow cooker with a slotted spoon. Add onions, celery, carrots, potatoes, tomatoes, broth, and spices. Stir well.
  3. Set to Cook: Cover and set slow cooker to low for 8-10 hours.
  4. Add Spinach and Seasoning: Stir in spinach 30 minutes before serving. Adjust salt and pepper to taste.
  5. Serve and Garnish: Ladle into bowls and garnish with parsley before serving warm, preferably with bread or salad.
