  • 3 cups Sweet Potatoes cubed
  • 2 tablespoons Avocado Oil or olive oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika

For the Sloppy Joe Mixture
  • 1 medium Yellow Onion chopped
  • 1 medium Bell Pepper chopped
  • 1 pound Lean Ground Beef or ground turkey
  • 2 tablespoons Tomato Paste
  • 1 tablespoon Yellow Mustard or Dijon mustard
  • 1 tablespoon Apple Cider Vinegar
  • 2 tablespoons Coconut Aminos or low-sodium soy sauce
Optional Fresh Toppings
  • 1/2 cup Pickled Onions
  • 1/2 cup Pickles
  • 1/4 cup Fresh Parsley chopped

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400℉ (200℃).
  2. Cube sweet potatoes into even-sized pieces and toss with avocado oil, garlic powder, paprika, salt, and pepper.
  3. Spread sweet potato cubes on a baking sheet and roast for 18 minutes.
  4. Toss the sweet potatoes and roast for an additional 5 to 8 minutes until fork-tender and golden brown.
  5. Heat avocado oil in a skillet and sauté onion and bell pepper for about 5 minutes until softened.
  6. Add the ground beef, breaking it apart, and cook for 10 to 12 minutes until browned and cooked through.
  7. Stir in water, tomato paste, mustard, vinegar, and coconut aminos, and let simmer for 8 to 10 minutes.
  8. To assemble, divide roasted sweet potatoes into bowls and top with sloppy joe mixture. Add optional toppings as desired.
  9. Serve warm and enjoy!
