- Preheat the oven to 400℉ (200℃).
- Cube sweet potatoes into even-sized pieces and toss with avocado oil, garlic powder, paprika, salt, and pepper.
- Spread sweet potato cubes on a baking sheet and roast for 18 minutes.
- Toss the sweet potatoes and roast for an additional 5 to 8 minutes until fork-tender and golden brown.
- Heat avocado oil in a skillet and sauté onion and bell pepper for about 5 minutes until softened.
- Add the ground beef, breaking it apart, and cook for 10 to 12 minutes until browned and cooked through.
- Stir in water, tomato paste, mustard, vinegar, and coconut aminos, and let simmer for 8 to 10 minutes.
- To assemble, divide roasted sweet potatoes into bowls and top with sloppy joe mixture. Add optional toppings as desired.
- Serve warm and enjoy!
