Preparation Steps
- Preheat your oven to 400°F (200°C).
 - In a mixing bowl, combine olive oil, red wine vinegar, stone-ground mustard, garlic powder, salt, and freshly cracked pepper. Whisk together until well blended.
 - Slice bell peppers and onion into 1/4-inch strips and transfer to a large baking sheet.
 - Arrange bratwurst links on top of the sliced vegetables. Drizzle the vinaigrette over the mixture and toss to coat.
 - Roast in the oven for 20 minutes, stir, and then continue roasting for another 20-25 minutes until browned and tender.
 - Remove from oven and fill toasted buns with roasted bratwurst and vegetables.
 - Sprinkle cheddar cheese on top of filled buns and return to oven for 5 minutes until melted.
 - Serve warm, adding mustard if desired.
