Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, red wine vinegar, stone-ground mustard, garlic powder, salt, and freshly cracked pepper. Whisk together until well blended.
  3. Slice bell peppers and onion into 1/4-inch strips and transfer to a large baking sheet.
  4. Arrange bratwurst links on top of the sliced vegetables. Drizzle the vinaigrette over the mixture and toss to coat.
  5. Roast in the oven for 20 minutes, stir, and then continue roasting for another 20-25 minutes until browned and tender.
  6. Remove from oven and fill toasted buns with roasted bratwurst and vegetables.
  7. Sprinkle cheddar cheese on top of filled buns and return to oven for 5 minutes until melted.
  8. Serve warm, adding mustard if desired.
