Ingredients
  

For the Noodles
  • 8 ounces Lo Mein Noodles Substitute with spaghetti or udon if needed.
For the Filling
  • 1 pound Ground Pork Can swap for ground chicken, turkey, or tofu.
  • 4 cups Coleslaw Mix Fresh shredded cabbage works well.
For the Sauce
  • 1 cup Low-Sodium Chicken Broth Use homemade for extra flavor.
  • 2 tablespoons Mirin Mix rice vinegar and 1 tsp sugar if needed.
  • 3 tablespoons Dark Soy Sauce Regular soy sauce can be substituted.
  • 2 cloves Minced Garlic Use fresh for best flavor.
  • 1 tablespoon Grated Ginger Use fresh for best flavor.
  • 1 teaspoon Sesame Oil Use sparingly for a nutty flavor.
  • to taste Sriracha Optional for added heat.
For Cooking
  • 2 tablespoons Peanut Oil Can be replaced with vegetable or canola oil.
  • 4 stalks Green Onions Reserve some for garnishing.

Method
 

Cooking Steps
  1. Bring a large pot of water to a boil. Add the Lo Mein noodles and cook according to package instructions until al dente, about 4–6 minutes. Drain and rinse under cold water, set aside.
  2. In a large skillet, heat peanut oil over medium-high heat. Add ground pork and ¼ cup of green onions. Cook until pork is browned and fully cooked, about 5–6 minutes.
  3. Whisk together sauce ingredients in a bowl: chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha to taste. Set aside.
  4. Reduce heat to medium. Add cooked noodles, coleslaw mix, and sauce to the skillet with pork. Toss gently until noodles are coated and cabbage softens, about 2 minutes.
  5. Cook for an additional 2–3 minutes until heated through. Garnish with remaining green onions before serving.
