Cooking Steps
- Begin by bringing a large pot of salted water to a rolling boil. Add your fresh Lo Mein noodles and cook for about 2-3 minutes until they are tender yet al dente. Once cooked, drain and toss with 1 tablespoon of vegetable oil to prevent sticking.
- In a medium mixing bowl, combine the light soy sauce, dark soy sauce (if using), oyster sauce, granulated sugar, white pepper, and a slurry made from cornstarch mixed with water. Whisk until well incorporated and sugar is dissolved.
- Heat 2 tablespoons of vegetable oil in a large wok or skillet over medium-high heat. Add minced garlic, grated ginger, and white parts of the green onions. Stir-fry for about 30 seconds, or until fragrant and lightly golden.
- Carefully add the cooked noodles to the wok, then pour the prepared sauce over. Toss for about 2-3 minutes until the noodles are evenly coated and heated through.
- Add the green parts of green onions to the noodles and toss briefly until wilted; about 15-30 seconds. Serve immediately while hot.
