Ingredients
  

For the Noodles
  • 8 ounces fresh Lo Mein noodles Use dried egg noodles if fresh aren't available.
For the Sauce
  • 3 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce Optional but highly recommended.
  • 1 tablespoon oyster sauce Not mandatory; a treat if included.
  • 1 teaspoon granulated sugar Omit for a healthier version.
  • 1/2 teaspoon white pepper Substitute with black pepper for milder taste.
  • 1 tablespoon cornstarch Mix with water to create a slurry before using.
For Flavor and Aroma
  • 2 tablespoons vegetable oil Peanut oil works wonderfully as well.
  • 1 teaspoon sesame oil Add at the end for a delightful nutty aroma.
  • 3 cloves garlic Freshly minced.
  • 1 tablespoon fresh ginger Grated or minced for full flavor infusion.
  • 2 stalks green onions Cook the white parts, sprinkle the greens for garnish.

Method
 

Cooking Steps
  1. Begin by bringing a large pot of salted water to a rolling boil. Add your fresh Lo Mein noodles and cook for about 2-3 minutes until they are tender yet al dente. Once cooked, drain and toss with 1 tablespoon of vegetable oil to prevent sticking.
  2. In a medium mixing bowl, combine the light soy sauce, dark soy sauce (if using), oyster sauce, granulated sugar, white pepper, and a slurry made from cornstarch mixed with water. Whisk until well incorporated and sugar is dissolved.
  3. Heat 2 tablespoons of vegetable oil in a large wok or skillet over medium-high heat. Add minced garlic, grated ginger, and white parts of the green onions. Stir-fry for about 30 seconds, or until fragrant and lightly golden.
  4. Carefully add the cooked noodles to the wok, then pour the prepared sauce over. Toss for about 2-3 minutes until the noodles are evenly coated and heated through.
  5. Add the green parts of green onions to the noodles and toss briefly until wilted; about 15-30 seconds. Serve immediately while hot.
