Beef Mixture
  • 1 pound lean ground beef or substitute with ground turkey
  • 1/4 cup soy sauce low-sodium recommended
  • 2 tablespoons brown sugar or substitute with honey or coconut sugar
  • 2 cloves garlic minced
  • 1 tablespoon ginger fresh, grated
Vegetables
  • 1 cup cucumbers sliced
  • 1 cup carrots shredded
  • 1 cup spinach fresh
For Serving
  • 2 cups rice cooked jasmine or brown rice
  • 1 tablespoon sesame seeds optional
  • 2 tablespoons chopped green onions for garnish

Cooking Steps
  1. In a large skillet, heat over medium-high heat and add the lean ground beef, breaking it apart with a spatula. Cook for about 5–7 minutes until browned and no longer pink.
  2. Add the minced garlic and grated fresh ginger to the skillet, stirring well. Sauté for 1–2 minutes until fragrant.
  3. Pour in the soy sauce and sprinkle the brown sugar over the beef mixture. Stir thoroughly and cook for another 2–3 minutes.
  4. While the beef mixture cooks, prepare your rice according to package instructions.
  5. To serve, scoop a generous portion of warm rice into each bowl and pile on the beef mixture.
  6. Top each bowl with sliced cucumbers, shredded carrots, and fresh spinach.
  7. Garnish with sesame seeds and chopped green onions before serving.
