  • 1 package all-butter puff pastry
For the Filling
  • 1 cup Gruyère cheese (or Emmental), grated Look for an AOP seal for quality
  • 1 teaspoon freshly ground black pepper Add more if desired
  • 1 teaspoon sea salt flakes
For the Glaze
  • 1 large egg yolk For the egg wash
  • 0.5 tablespoon milk Mixed with the egg for the wash

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (205°C) and line two baking sheets with parchment paper.
  2. Roll the thawed puff pastry into an 18"x18" square, about 1/8-inch thick.
  3. Sprinkle grated Gruyère cheese over one half of the pastry, leaving a 1-inch border. Add black pepper and brush the border with milk.
  4. Fold the pastry over to create a pocket and press edges to seal.
  5. Whisk together the egg yolk and milk, then brush the mixture over the top.
  6. Sprinkle with remaining black pepper and sea salt flakes.
  7. Slice the pastry into ½-inch wide strips, twist each strip, and place on baking sheets.
  8. Bake for 12-14 minutes until golden and puffed, then cool slightly before serving.
  9. Serve warm on a platter for immediate enjoyment.
