Preparation Steps
- Preheat your oven to 375°F (190°C) and grease your loaf pan.
- In a large mixing bowl, combine ground chicken, breadcrumbs, eggs, milk, Dijon mustard, garlic powder, onion powder, salt, black pepper, paprika, and dried parsley. Mix until just combined.
- Spread half of the meatloaf mixture into the bottom of the prepared loaf pan. Lay the sliced deli ham evenly on top, followed by Swiss cheese slices. Spoon the remaining meat mixture on top and seal the edges.
- Bake the meatloaf in the preheated oven for 45–50 minutes, until the internal temperature reaches 165°F (74°C).
- In the last 5 minutes of baking, mix breadcrumbs with melted butter and sprinkle over the top. Optionally spread the Dijon-mayo mixture and add shredded Swiss cheese.
- Once out of the oven, let the meatloaf rest for about 10 minutes before slicing and serving.
