  • 1.5 cups buttermilk
  • 0.25 cups unsalted butter melted
  • 2 large eggs
  • 1 cup sharp cheddar cheese shredded
  • 0.5 cups pickled jalapeños chopped
  • 1 tablespoon honey optional

Instructions
  1. Preheat your waffle iron according to the manufacturer's instructions and lightly grease it.
  2. In a large bowl, whisk together cornmeal, all-purpose flour, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk buttermilk, melted butter, and eggs until smooth. Optionally add honey.
  4. Gently fold the wet ingredients into the dry mixture and fold in the shredded cheese and chopped jalapeños.
  5. Pour about ¾ cup of batter onto the waffle iron and cook for 5-7 minutes until golden brown.
  6. Serve warm with toppings of your choice.
