- Preheat your waffle iron according to the manufacturer's instructions and lightly grease it.
- In a large bowl, whisk together cornmeal, all-purpose flour, baking powder, baking soda, and salt.
- In a separate bowl, whisk buttermilk, melted butter, and eggs until smooth. Optionally add honey.
- Gently fold the wet ingredients into the dry mixture and fold in the shredded cheese and chopped jalapeños.
- Pour about ¾ cup of batter onto the waffle iron and cook for 5-7 minutes until golden brown.
