  • 1 cup finely chopped onion
  • 1 cup finely chopped celery

Method
 

Instructions
  1. Preheat the oven to 425°F (220°C) for about 10-15 minutes.
  2. Melt 4 tablespoons of butter in a large skillet over medium heat and sauté 1 cup each of finely chopped onion, celery, and bell peppers until soft and fragrant, about 5-7 minutes.
  3. Sprinkle in 1/4 cup of flour, stirring continuously for 2-3 minutes until the roux is slightly golden brown.
  4. Gradually whisk in 1 cup of heavy cream and 2-3 tablespoons of Cajun seasoning, cooking for another 4-5 minutes until thickened.
  5. Gently fold in 2 cups of your chosen seafood and cook for 2-3 minutes until heated through.
  6. Pour the seafood mixture into a prepared pie crust, cover with another pie crust, crimp edges, and cut slits for steam to escape.
  7. Bake in the preheated oven for 25-30 minutes until crust is golden brown and filling is bubbling.
  8. Let the pie rest for 10-15 minutes before slicing and serve warm.
