  • 1 large Egg Can substitute with a soft-boiled or fried egg.
For the Toppings
  • 1 whole Avocado Pick one that is ripe and slightly yielding.
  • 1 tablespoon Parmesan Cheese Optional, can swap for nutritional yeast.

Method
 

Cooking Instructions
  1. Bring 1 cup of water to a rolling boil in a medium saucepan.
  2. Add 1 cup of rolled oats and a pinch of salt, then cover and reduce to a simmer for 5 minutes.
  3. Remove from heat and let sit covered for 3 minutes.
  4. Poach the egg in a separate pot for about 3 minutes until the whites are set.
  5. Pour the oatmeal into a bowl, top with the poached egg and sliced avocado.
  6. Sprinkle with Parmesan, herbs, and black pepper before serving.
