  • 2 pieces Dried Pasilla or New Mexico Chiles
  • 2 cups Chicken Broth or vegetable broth
  • 1/4 cup Apple Cider Vinegar
  • 1 teaspoon Sea Salt or Kosher Salt to taste
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dried Oregano or fresh oregano
  • 1 teaspoon Dried Coriander
  • 1/4 teaspoon Ground Cloves use sparingly
  • 2 pieces Bay Leaves

Method
 

Step-by-Step Instructions
  1. Step 1: Season Chicken. Pat chicken dry, season with sea salt and black pepper. Set aside.
  2. Step 2: Make Sauce. Heat olive oil, sauté onion until translucent, add tomatoes and cook, stir in garlic, chiles, and broth, simmer for 10 minutes.
  3. Step 3: Blend the Sauce. Transfer sauce to a blender, add vinegar, spices, and bay leaves, blend until smooth.
  4. Step 4: Cook Chicken in the Pot. Return sauce to pot, add chicken, cover, and simmer for 45 minutes until tender.
  5. Step 5: Optional Oven Method. Preheat oven to 350°F. After browning, pour sauce over chicken, cover, and bake for 40-45 minutes.
  6. Step 6: Finish and Serve. Adjust seasoning, remove bay leaves, serve hot over rice or tortillas with cilantro.
