  • 8 oz short pasta (penne or rotini)

  • 1 lb ground beef can substitute with ground turkey
  • 2 medium bell peppers (mixed colors) diced
For the Sauce
  • 1 cup tomato sauce can add garlic powder or Italian seasoning
For the Topping
  • 1 cup shredded cheese cheddar or mozzarella

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add short pasta and cook according to package instructions until al dente, about 8-10 minutes.
  2. In a large skillet over medium heat, add oil and heat. Add ground beef, breaking apart, and cook until fully browned, about 5-7 minutes. Drain excess grease.
  3. Stir in diced bell peppers and sauté for 5-7 minutes until softened.
  4. Pour in tomato sauce, stir and simmer on low heat for about 5 minutes.
  5. Add drained pasta to the skillet and toss until well-coated. Add reserved pasta water if needed.
  6. Sprinkle shredded cheese on top, stir until melted, or broil for 2-3 minutes for a crispy finish.
  7. Serve hot, garnished with extra cheese if desired.
