  • 2 medium Zucchini slice thinly for even cooking
  • 1 cup Cheddar Cheese can swap for Monterey Jack or dairy-free cheese
  • ½ cup Parmesan Cheese optional for a lighter dish
  • ½ cup Sour Cream or Greek Yogurt use coconut or cashew yogurt for lactose intolerance
  • ¼ cup Mayonnaise

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a baking dish.
  2. In a skillet, sauté finely chopped onion and minced garlic in olive oil for 3-4 minutes until soft.
  3. In a mixing bowl, combine shredded cooked chicken, sautéed onion and garlic, sour cream, mayonnaise, Italian seasoning, salt, and pepper.
  4. Gently fold in thinly sliced zucchini along with half of the cheddar and Parmesan cheeses.
  5. Transfer the mixture into the greased baking dish and top with remaining cheese.
  6. Bake uncovered for 25-30 minutes until the top is golden brown and bubbling.
  7. Let the casserole rest for about 5 minutes before serving.
  8. Garnish with freshly chopped parsley or basil before serving.
