  • 480 ml Water (for tea) boiling
  • 2 bags White Tea Bags delicate flavor
  • 90 ml Freshly Squeezed Lemon Juice fresh recommended
For the Peach Thyme Syrup
  • 3 Peaches roughly chopped
  • 5 sprigs Fresh Thyme or lemon thyme for citrus twist
  • 120 ml Water (for syrup)
  • 33 g Granulated Sugar or honey/sugar substitutes

  • ¼ peach Peach (for garnish) thinly sliced
  • 2 sprigs Fresh Thyme (for garnish)

Method
 

Step-by-Step Instructions for Peach Thyme Iced Tea
  1. Start by boiling water in a kettle until it reaches 160–185°F. In a heatproof pitcher, pour in 480 ml of hot water and add 2 white tea bags. Let the tea steep for about 8-10 minutes. Remove the tea bags and allow the mixture to cool to room temperature. Stir in 90 ml of freshly squeezed lemon juice.
  2. In a medium saucepan, combine 3 roughly chopped peaches, 5 sprigs of fresh thyme, 120 ml of water, and 33 g of granulated sugar. Bring this mixture to a boil over medium heat, then reduce and let it simmer for 20 minutes, mashing the peaches.
  3. After simmering, remove from heat and allow the syrup to cool slightly. Strain the mixture into a bowl using a fine mesh sieve, pressing to extract all liquid. Discard the solids and let the syrup cool completely.
  4. Fill glasses with ice cubes (about 80 g). Mix 1 part of the cooled peach thyme syrup with 2 parts of brewed tea in each glass. Stir gently to combine.
  5. Garnish each glass with thin slices of fresh peach and a sprig of fresh thyme. Serve immediately and enjoy.
