Step-by-Step Instructions for Peach Thyme Iced Tea
- Start by boiling water in a kettle until it reaches 160–185°F. In a heatproof pitcher, pour in 480 ml of hot water and add 2 white tea bags. Let the tea steep for about 8-10 minutes. Remove the tea bags and allow the mixture to cool to room temperature. Stir in 90 ml of freshly squeezed lemon juice.
- In a medium saucepan, combine 3 roughly chopped peaches, 5 sprigs of fresh thyme, 120 ml of water, and 33 g of granulated sugar. Bring this mixture to a boil over medium heat, then reduce and let it simmer for 20 minutes, mashing the peaches.
- After simmering, remove from heat and allow the syrup to cool slightly. Strain the mixture into a bowl using a fine mesh sieve, pressing to extract all liquid. Discard the solids and let the syrup cool completely.
- Fill glasses with ice cubes (about 80 g). Mix 1 part of the cooled peach thyme syrup with 2 parts of brewed tea in each glass. Stir gently to combine.
- Garnish each glass with thin slices of fresh peach and a sprig of fresh thyme. Serve immediately and enjoy.
