Step-by-Step Instructions
  1. Prepare the Cabbage: Cut napa cabbage into quarters, remove the stem, and place in a large bowl.
  2. Create the Saltwater Bath: Dissolve salt in cold water and pour over cabbage. Soak for 1 hour.
  3. Make the Kimchi Sauce: Combine garlic, gochugaru, yondu, soy sauce, and maesilaek until smooth.
  4. Rinse the Cabbage: Rinse cabbage under cold water three times to remove excess salt. Drain thoroughly.
  5. Combine Ingredients: Mix drained cabbage with green onions and kimchi sauce using gloves.
  6. Final Seasoning: Adjust salt to taste, sprinkle in sesame seeds, and mix.
  7. Serve or Store: Serve immediately or store in an airtight container in the fridge.
