Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine 2 cups of diced ripe mangoes, 2 cups of shredded green cabbage, 1 grated large carrot, 1 sliced red bell pepper, 1 sliced red onion, and 1/2 cup of chopped fresh cilantro.
  2. In a small bowl, whisk together 1/4 cup of fresh lime juice, 2 tablespoons of honey (or maple syrup), and 2 tablespoons of sesame oil. Add a pinch of salt and pepper to taste.
  3. Pour the dressing over the mango and vegetable mixture. Using salad tongs, gently toss everything together.
  4. Let the slaw sit at room temperature for 5 to 10 minutes.
  5. Serve the mango slaw chilled or at room temperature, garnished with extra cilantro and lime wedges.
