Preparation Steps
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x9-inch baking dish with cooking spray or olive oil.
  2. In a large mixing bowl, whisk together the cottage cheese and eggs until smooth.
  3. Stir in shredded mozzarella cheese (reserving some for topping), mini turkey pepperoni, grated parmesan cheese, Italian seasoning, garlic powder, salt, and pepper. Mix thoroughly.
  4. Pour the mixture into the prepared baking dish and spread it out evenly.
  5. Sprinkle the reserved mozzarella cheese and remaining turkey pepperoni over the top.
  6. Bake in the preheated oven for 30-35 minutes until the cheese is bubbly and the top is golden brown.
  7. Remove from the oven and let it cool for 5-10 minutes before slicing and serving.
