Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a muffin pan with paper liners or grease it.
  2. In a bowl, mix together all-purpose flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt until well blended.
  3. Melt unsalted butter and let it cool slightly. In another bowl, whisk eggs and vanilla until frothy, then add melted butter.
  4. Fold the wet ingredients into the dry ingredients gently until combined without overmixing.
  5. Toss diced peaches in a tablespoon of flour and fold them into the batter.
  6. Fill muffin cups two-thirds full with batter.
  7. Mix sugar with cinnamon and sprinkle it generously over the muffin tops.
  8. Bake muffins for 20 to 25 minutes, checking for doneness at 20 minutes.
  9. Cool muffins in the pan for 5 minutes before transferring them to a wire rack.
