  • 250 g Fresh Mozzarella Cheese Use high-quality mozzarella for best results.
  • 50 g Grated Parmesan Cheese For a savory crust.
  • Handful Fresh Basil Leaves Torn, dried basil can be used if fresh is unavailable.

Method
 

Step-by-Step Instructions
  1. Boil a large pot of salted water and cook pasta for 2 minutes less than package instructions. Strain and set aside.
  2. In a skillet, heat olive oil and sauté minced garlic until fragrant but not burnt.
  3. Add tomato passata to the skillet, season with salt and pepper, and let it simmer for 10-15 minutes.
  4. Preheat oven to 400°F (200°C).
  5. Add cooked pasta to the sauce and mix, adding reserved cooking water if needed.
  6. Transfer to a baking dish, top with mozzarella, Parmesan, and remaining basil.
  7. Bake in oven for 15-20 minutes until cheese is bubbly and golden.
  8. Let cool for a couple of minutes, then serve hot.
