- Marinate the shrimp by combining shrimp with oil from the sun-dried tomatoes, lemon juice, kosher salt, black pepper, celery salt, and crushed red pepper. Toss to coat and refrigerate for 15 minutes.
- In a wide pot, heat 2 tablespoons of olive oil over medium heat. Add leeks and sauté for 3-4 minutes until softened.
- Stir in sun-dried tomatoes and sauté for 1 minute. Add orzo and season with salt and black pepper.
- Pour in water or seafood stock and bring to a boil. Reduce heat to low and simmer for 10-12 minutes until orzo is tender.
- Fold in marinated shrimp and cook for 3-5 minutes until shrimp are opaque.
