Ingredients
  

For the Pasta Base
  • 2 tablespoons Olive Oil Substitute with butter for a different flavor.
  • 14 ounces Smoked Kielbasa (or Turkey/Chicken Sausage) Any cooked sausage can be used.
  • 1 cup Diced Onion Can substitute with shallots or omit.
  • 3 cloves Garlic Fresh garlic is preferred.
  • 4 cups Low-Sodium Chicken Broth Vegetable broth can be used for vegetarian option.
  • 1 can Diced Tomatoes Fresh tomatoes can be used.
  • 12 ounces Dry Pasta (small pasta) Use small pasta like penne or rotini.
  • 1 cup Milk or Heavy Cream Substitute with half-and-half or plant-based milk.
  • to taste Salt

For the Topping
  • 1 cup Shredded Cheddar Cheese Parmesan or Monterey Jack can be used.
  • 1 bunch Sliced Scallions Can replace with chives.

Method
 

Preparation Steps
  1. In a large 4-5 quart sauté pan, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
  2. Add the sliced kielbasa and diced onion to the pan. Cook for about 5–7 minutes, stirring occasionally, until the onions are translucent and the kielbasa is lightly browned.
  3. Stir in minced garlic and cook for an additional 30 seconds until fragrant.
  4. Pour in 4 cups of low-sodium chicken broth, one can of diced tomatoes, and 1 cup of milk or heavy cream. Add 12 ounces of dry small pasta along with salt and pepper to taste. Stir to combine and bring to a simmer for about 3–4 minutes.
  5. Reduce the heat to medium and let the mixture simmer uncovered for about 15 minutes, stirring occasionally.
  6. Once cooked, remove from heat and stir in half of the shredded cheddar cheese until melted. Sprinkle the remaining cheese on top, cover, and let sit for 2–3 minutes.
  7. Garnish with sliced scallions before serving and enjoy your comforting pasta dish!
