Preparation Steps
- In a large 4-5 quart sauté pan, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
- Add the sliced kielbasa and diced onion to the pan. Cook for about 5–7 minutes, stirring occasionally, until the onions are translucent and the kielbasa is lightly browned.
- Stir in minced garlic and cook for an additional 30 seconds until fragrant.
- Pour in 4 cups of low-sodium chicken broth, one can of diced tomatoes, and 1 cup of milk or heavy cream. Add 12 ounces of dry small pasta along with salt and pepper to taste. Stir to combine and bring to a simmer for about 3–4 minutes.
- Reduce the heat to medium and let the mixture simmer uncovered for about 15 minutes, stirring occasionally.
- Once cooked, remove from heat and stir in half of the shredded cheddar cheese until melted. Sprinkle the remaining cheese on top, cover, and let sit for 2–3 minutes.
- Garnish with sliced scallions before serving and enjoy your comforting pasta dish!
