Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat until shimmering.
  2. Pour in 4 cups of chicken broth and bring it to a gentle simmer. Stir in 8 ounces of penne pasta and cover. Cook for about 10 minutes, stirring occasionally.
  3. Reduce heat to low and add in 1 cup of heavy cream, ½ cup of buffalo sauce, 4 ounces of cream cheese, and 2 cups of cooked chicken. Stir until cream cheese melts.
  4. Mix in 1 cup of shredded cheddar cheese, stirring until it melts into the sauce.
