Step-by-Step Instructions
  1. In a large pot, heat olive oil over medium heat. Add chicken seasoned with Cajun seasoning, salt, and pepper. Cook for 5-7 minutes until golden brown. Remove and set aside.
  2. In the same pot, add diced onion and minced garlic. Sauté for 2-3 minutes until fragrant. If using, add bell pepper and cook for another 2 minutes.
  3. Stir in orzo and cook for one minute, absorbing flavors. Pour in chicken broth and heavy cream. Bring to a gentle boil.
  4. Reduce heat to low, cover, and simmer for 10-12 minutes. Stir occasionally until orzo is tender and liquid is absorbed.
  5. Fold in cooked chicken and Parmesan cheese. Stir until cheese is melted and dish is creamy. Adjust seasoning as needed.
  6. Let sit for a minute before serving. Garnish with chopped parsley and serve warm.
